Hello Airbuddha,
I have also dl and tried the dauntless, is there anyway to get a working virtual ckpt by copying one of the other planes or do you need to edit a file?

No Sir,

There's no way to add a working virtual cockpit to the AI planes.

A CAD program wouldn't work either, unless the editor had the source codes to work with.

Microsoft of course has the source code, so it's completely feasible for them to add them in the form of a patch. I doubt this will happen.

Third party vendors and back yard model builders will be filling the gap here shortly with their own models I would assume.
