Falcon 4.0 has settings you can manipulate for the type of game you can play.
Go into Setup | Simulation
and on the right-hand side there's settings for Invulnerability, Unlimited fuel, chaff and flares.
It affects your realism rating but hey! it's your game
Also when you go into Dogfight(against the Falcon AI pilots), when you add an enemy in Furball, you can vary his skill. Recruit->Cadet->Average->Veteran->Ace
On the left-hand side of the Setup|Simulation screen for changing things to easier settings. I prefer all realistic + BOTH Canopy cues. There are ways to be realistic and make the game do what you want. Flight sims are like that.
Also while Dogfighting the AI Mig-29s or Su-27s, I hit '6' the tracking key. Most times you'll see where the enemy is and his position relative to yours. Then you can go hit '4' to get him on your HUD and start chasing him down. Occasionally, I start tracking one of his missiles which is a different type of fun
